These Chai-Spiced Stewed Apples are the ideal Ayurvedic breakfast for crisp mornings. They nourish the body, lift the mood, and support women's hormonal health. I’ve used Pukka Herbs Licorice Chai with cocoa, cinnamon, and licorice for its warming, soothing qualities.   • 2 large organic apples (preferably sweet varieties like Fuji or Gala), peeled and chopped
  • 1 Licorice Chai tea bag (Pukka Herbs Licorice Chai & Cocoa)
  • 1/4 cup of water
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/8 tsp ground ginger
  • 1 tsp ghee or coconut oil (for a vegan option)
  • 1 tsp maple syrup or honey (optional)
  • A pinch of nutmeg (optional)

1. Prepare the Apples by peeling, deseed and chopping the apples into bite-sized pieces.

2. Heat 1 tsp of ghee or coconut oil in a medium saucepan over low to medium heat. Add the chopped apples and sauté for 1-2 minutes, coating the apples with the ghee or oil.

3. Add the t-bag into the apple water to a simmer in a small saucepan and let it steep for 3-5 minutes, creating a concentrated tea infusion.

4. Sprinkle in the cinnamon, cardamom, ground ginger, and a pinch of nutmeg (if using), stirring to coat the apples in the warming spices.

5. Cover the saucepan and let the apples simmer on low heat for about 10-12 minutes, stirring occasionally until the apples are tender but not mushy. If you like it sweeter, drizzle a bit of maple syrup or honey at the end of cooking.

6. Once done, remove from heat and serve the stewed apples warm in a bowl.
