Sweet and sticky this jam will blow you away if you are a fan of dates. Sugars are grounding for Vata and Pitta types but will push Kapha dosha out of balance. This smooth and sweet treat we call “restorative jam” makes a wonderful breakfast spread. High in magnesium and fibre and several essential minerals including copper, iron, manganese, magnesium, and selenium all super important for strength in your bones, blood, support the nervous system. Eat it with toast or on millet porridge and store for a week in the fridge or longer. Also great to add to bedtime milk drinks for added replenishment.

1. Start by destoning the dates and soaking them overnight for that perfect softness.
2. In the morning, transfer the soaked dates to a saucepan and warm them up. Add in the ground cardamom powder and the saffron. Let it cook for about 8 minutes gently until the dates are nice and soft.
3. Next, add in the melted ghee (or coconut oil) and the fresh lime juice for that zesty touch.
4. Once the mixture has cooled slightly, transfer it to a mini blender and blend until smooth.
5. If you're feeling a bit fancy, go ahead and add in the optional coconut flakes for an extra layer of flavour and texture.
