1/2 cup split yellow mung dal (lentils), rinsed
1/2 cup basmati rice, rinsed
1 tbsp ghee (clarified butter)
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp turmeric root sliced fine
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp fennel seeds
1 pinch of asafoetida (hing)
4-5 cups of water (adjust for desired consistency)
Salt to taste
Fresh cilantro for garnish
Optional: A small piece of ginger, chopped

1. Rinse the split mung dal and basmati rice thoroughly until the water runs clear. Set them aside.
2. Heat the ghee in a large pot over medium heat. Add the cumin seeds, mustard seeds, and 3 fennel seeds, allowing them to sizzle for a few seconds until they release their aroma.
3. Add the asafoetida and ginger (if using) to the pot, sautéing for about 30 seconds.
4. Add the turmeric, coriander, and cumin powders to the pot, stirring well to combine.
5. Add the rinsed mung dal and rice to the pot, stirring to coat them with the spices.
6. Pour in 4-5 cups of water, depending on how thick or soupy you want your kitchari. Bring it to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the mung dal and rice are soft and fully cooked. Stir occasionally to prevent sticking.
7. Once the kitchari is cooked, add salt to taste and stir well. Garnish with fresh cilantro before serving.
