Moringa Fresh Toast is a nutritious and flavorful breakfast or snack option. The moringa adds a unique taste and health benefits to the dish, while the slivered almonds provide a delightful crunch. Adjust the sweetness according to your preference by adding more or less jaggery/raw sugar.

  • 8 slices Kumut Bread (soft sliced bread, tender and white)
  • 1 tbsp moringa
  • 2 eggs
  • 1 tbsp jaggery or raw sugar
  • 2 tbsp slivered almonds
  • 1 tbsp ghee (to cook)
  • 1 tsp honey or maple syrup

INSTRUCTIONS

1. In a shallow bowl, whisk together the eggs, moringa, and jaggery/raw sugar until well combined.

2. Heat a non-stick pan over medium heat and add the ghee. Allow it to melt, and brush to coat the pan evenly.

3. Dip each slice of Kumut Bread into the egg mixture, ensuring both sides are coated.

4. Place the coated bread slices onto the preheated pan, allowing them to cook until golden brown and crispy on both sides.

5. While the bread is cooking, sprinkle slivered almonds on top of each slice.

6. Flip the bread slices to cook the other side, ensuring they are evenly cooked and the almonds are toasted.

7. Once cooked to your desired level of crispness, remove the Moringa Fresh Toast from the pan and serve hot.

8. You can enjoy it as is or serve it with your favourite toppings, such as maple syrup, a drizzle of honey or a dollop of yoghurt.
