  • 1 cup rolled oats
  • ½ cup buckwheat groats
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground allspice
  • ½ cup unsweetened coconut flakes
  • 2 tablespoons flax seeds
  • ⅓ cup water
  • 2 cups plant-based milk (such as almond, oat, or coconut)
  • 1 cup chopped dates
  • ¼ cup maple syrup
  • ¼ cup rose petals (optional)
  • 2 tbsp pumpkin seeds

1. Preheat your oven to 175°C (350°F). Lightly grease a baking dish with ghee or coconut oil.

2. Combine the dry ingredients: In an oven dish, add together the oats, buckwheat groats, cinnamon, and allspice.

3. Prepare the flaxseed “egg”: In a small bowl, combine the flax seeds with the water. Let it sit for 5 minutes, allowing the flax seeds to gel.

4. Assemble the bake: Add the coconut flakes, plant-based milk, chopped dates, maple syrup, and flaxseed mixture to the dry ingredients. Stir well to combine.

5. Optional: If using, sprinkle the rose petals on top of the mixture along with the pumpkin seeds.

6. Bake for 55-60 minutes, or until the edges are set and the centre is mostly firm. A toothpick inserted in the centre should come out with a few moist crumbs.

7. Let cool slightly before serving. Enjoy warm with your favourite toppings, such as creamy coconut yoghurt or chopped nuts.
