Raspberry Banana Crunch Muesli

This muesli is suitable for Kapha and vata types and slightly warming for pitta so avoid if you feel out of balance dear pitta. Try to pacify and balance out the flavours with coconut milk. ⁠

  • 8 cup oat rice, ⁠
  • 3 bananas mashed⁠
  • 1/2 cup cashew nut butter⁠
  • 1/2 cup maple syrup⁠
  • 2-5 tbsp orange juice ⁠
  • 1 tbsp cinnamon powder⁠
  • 1 tsp cardamom powder⁠
  • 1/2 freeze-dried raspberry⁠
  • 3/4 cup toasted coconut ⁠

1. Preheat oven at 170⁠

2. Mash up the banana with nut butter maple syrup and spices.⁠

3. Pour over the oats and place in the oven.⁠

4. Mix in the sunflower seeds, the orange juice, cinnamon and the cardamom powder. ⁠

5. Place in the oven at 170 degrees for 20 minutes cooking or until golden brown and then leave to cool. About halfway through cooking get the tray out the oven, stir & turn before placing it back to cook again.⁠

6. Once its cooled add the freeze-dried raspberries and roasted coconuts. Store in a container for up to a month.⁠
