Sacred Kale & Squash Salad with Goats Cheese Recipe

This dish is an ode to Ayurvedic wisdom, featuring goat's cheese, known for its easy digestibility.   • 3 cups of kale, stripped, washed, and dried
  • 1 cup of fresh parsley, washed and chopped
  • 1 tbsp of ghee
  • 2 cups of butternut squash, peeled and diced
  • 2 sweet potatoes, peeled and diced
  • 1 cup of cooked quinoa
  • 250g of goat cheese
  • 4 tbsp of toasted almonds or walnuts, chopped

  • 1 tsp of honey
  • 1 tbsp of grain mustard,
  • 1/2 tsp of salt
  • 1 lemon juiced (2 tablespoons of juice)
  • 1/3 cup of extra-virgin olive oil

1. In a large bowl, combine the kale and parsley.


2. Preheat the oven to 220 degrees. Melt the ghee over medium heat in an oven tray and add the diced butternut squash and sweet potatoes. Cook for about 18 minutes, or until they are tender.


3. In a small bowl, whisk together the honey, grain mustard, salt, lemon juice, and olive oil. Add the kale and parsley and salad dressing and toss to combine. Crumble half the goat cheese over the top of the salad, and sprinkle the chopped almonds or walnuts on top.


4. Add the cooked quinoa to the bowl and toss again to combine.


5. Add in the squash and sweet potatoes.


6. Slice the goat cheese 5 mm thick and grill until it is golden on the edges, and sprinkle on rosemary. Season and serve on top of the salad on plates with a side of multigrain sourdough bread.
