INGREDIENTS

  • 2 cups plain cornflakes (unsweetened)
  • 2 tbsp oil (coconut or ghee)
  • 1/4 cup almonds, soaked and blanched
  • 1/4 cup cashews, pecans (optional soaked)
  • 1/4 tsp mustard seeds
  • 5–6 curry leaves (optional)
  • 1/2 tsp turmeric powder
  • 1/2 tsp smoked paprika or chili powder
  • 2 tsp curry powder
  • 1/4 tsp black salt or pink salt (adjust to taste)
  • 2 tbsp raisins or dried cranberries (optional for a sweet contrast)

1. In a small bowl, place the curry powder, paprika and turmeric spices together and set aside.


2. Prepare the large frying pan on a gentle heat to melt the oil. Add mustard seeds and let them pop, and then add fresh ginger to the grated and the curry leaves.


3. Add the almonds, cashews, and pecans to the pan. Toss in and sauté for 1–2 minutes until crispy. If using raisins or dried cranberries, stir them in for a hint of sweetness.


4. Add the powdered spices to the cornflakes to the pan and gently toss them in the mixture until evenly coated. Sauté for 2–3 minutes, stirring constantly, to ensure the cornflakes are crisp but not burnt.


5. Sprinkle with black salt or pink salt. Mix thoroughly.


6. Serve the spicy cornflake snack and eat them warm if you prefer. Store in an airtight container for up to a week.

  • Customise the nuts or seeds: Add walnuts, peanuts, coconut, sunflower seeds, or pumpkin seeds for extra crunch.
  • For a tangy twist, sprinkle a bit of chaat masala or amchur (dry mango powder)
