Blueberry Cheesecake

These chilled nutty cheesecakes will leave your guests with a smile. A very satisfying dessert for vata and pitta doshas, that will feel like a nourishing treat.

INGREDIENTS


  • 265 g 1 3/4 cup cashews soaked in water for 8 hrs
  • 1/2 lemon juice
  • 1 tsp cinnamon
  • 3/4 cup fresh blueberry
  • 1/2 cup honey or maple syrup

Base

  • 1 1/2 cup almonds
  • 1 cup Medjool dates
  • 1/2 tsp Himalayan salt
  • 1 tbsp coconut oil
  • 1/2 tsp ginger powder optional

1. Drain the cashews of water and place them in the food processor to blend with other filling ingredients. Blend altogether.

2. For the base, use a clean food processor and place all the base ingredients in together and Pulse until it forms a dough.

3. Use the base dough to fill a spring form cake tin or use a silicone mold. Next, pour on the filling and refrigerate for 1 hour, or until solidly set.

4. Keep one handful of blueberries blueberry a side as you will use them to decorate your cake top. Place all the filling ingredients into a the clean blender and pulse until smooth.

5. Pour the filling on top of the solidified base and decorate with the blueberries.
