Carrot Halva

Carrot Halva is nourishing and balancing for Vata and pitta dosha. Serve it warm and enjoy this dessert in the evening for a milky dessert treat.

This is a lavishly creamy, melt-in-your-mouth pudding studded with rich spices and nuts.

Its vivid color and powerful flavors make it a staple in Diwali, as well as other Indian festivals and special occasions.

  • 4 cups carrots, grated
  • 4 cups of coconut milk
  • 1/2 cup coconut sugar
  • 1 tbsp raisin
  • 2 pods cardamom crushed
  • a pinch of saffron

INSTRUCTIONS


INSTRUCTIONS


1. Place the ghee into a heavy bottomed pan and add in the carrot.

2. Cook on a gentle heat for 10 minutes or until translucent and fragrant.

3. Pour in the milk and add in the raisins and stir to combine well.

4. Add the pinch or saffron and cardamom and continue to cook down the milk until all the milk has evaptorated.

5. Serve in a glass with a cashew nut topping.
