Cassava (Yuca) Thick Chips

These yummy chips are made with a tropical tubular known as cassava. Cassava is an ancient food that's been around for more than 10,000 years. While it is a staple food for many I first tried this in Costa Rica. This vegetable root is loaded with beneficial dietary fibre, which helps to reduce blood pressure and cholesterol levels and supports stable blood sugar. It's rich in magnesium, copper, manganese, folate and vitamin C. All in all, eating this healthy root will help keep you digestion balanced and healthy.

  • 1 kg cassava peeled
  • Salt to taste
  • 2 tbsp ghee
  • Sprig of rosemary

INSTRUCTIONS

1. Preheat the oven to 200°C (400°F), Gas Mark 7.

2. Bring a large saucepan of salted water to the boil, and add the peeled cassava cut into quarters. Cook for about 20 minutes.

3. Drain and slightly cool before cutting them further into chunky chips. Arrange the chips on a baking tray and brush with ghee. Season generously with salt and rosemary and bake until golden; about 20 minutes.

4. Serve with Green pesto and Tahini mayonnaise on the side or in a dipping bowl.

  • 250 ml 9A oz tahini
  • 125 ml 4A oz lemon juice
  • 1 tbsp fresh ginger
  • ½ tsp salt
  • 175 ml 6A oz water

1. Mix the tahini, lemon juice, ginger and salt in a blender and add the water to create the desired consistency.

2. Keep covered in a jar in the refrigerator for up to a week
