Chickpea Squash Cumin Bowl + Mint Raita

I was first introduced to savory bowls in LA, the concept of getting all your nutritional needs met in a bowl was fun, fresh and delicious. Frankly I love all my food on one plate so its easy to work out how much of a portion your getting of each ingredient. Here we have half a plate of veggies with a seedy protein rich quinoa and gut health happy yogurt and raw cucumbers. It feels balanced and tastes wonderful. Sautued Squash & Portabella Mushroom

  • 3/4 cup squash peeled and diced
  • 5 portabello mushrooms diced in quarters
  • 1 cup chickpeas soaked and cooked
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp pink salt
  • 1/3 cup water


For the Raita

  • 1/2 tsp pink salt
  • 2 tbsp fresh mint
  • 1 tsp cumin powder

  • 3/4 cup quinoa
  • 1 tsp ghee or coconut oil
  • 1 tsp curry powder
  • 1 .5 cups of boiling water
  • pink salt to taste
