INGREDIENTS

  • 1 cup Basmati aged rice
  • 1 tbsp cumin seed

  • 4 cardamom pods or 1 tsp powder
  • 2 inch cinnamon stick
  • 2 tbsp ghee
  • 1 tsp pink rock salt
  • 2 cups boiling water

INSTRUCTIONS

INSTRUCTIONS

1. Wash the rice until all the grain is clear of white starch. This helps you get the right consistency of grain once it’s cooked so that the rice doesn't stick together. Soak the rice for 20 minutes in water to expand the grain so it’s extra fluffy.

2. Sautee the ghee and cumin seed, crushed cardamom pod, cinnamon stick and stir over a low flame. You should smell a sweet aroma as the spice fuse with the ghee. Add in the rice, raisins, salt and the boiling water.

3. Boil for 5 minutes and then place the lid on the pot and turn down the fire for an additional 8 minutes steaming. Turn off the flame and leave for 10 minutes before opening up the lid.

4. Use a fork to fluff up the rice and serve with simple dhal.
