Looking for a quick and easy breakfast or brunch option? Try these almond flour scones with a delightful twist of orange! Not only are they a delicious treat, but they also offer a protein boost to start your day right.In Ayurveda, almonds are known for their skin-moisturizing properties and their ability to support the body's seven Dhatus (tissues), including the reproductive tissue (Shukra dhatu). Plus, they're great for balancing Pitta dosha. If you have a Kapha imbalance, just remember to enjoy them in moderation.

1. Preheat the oven 180C or 375F.
2. Line your baking tray with paper and grease it with coconut oil in the centre where you will add the scone.
3. In a large bowl add the flours, zest, and sugar with the baking powder and soda.
4. Mix in a separate bowl the fennel with the wet ingredients almond milk and egg. Beat with a fork until well blended together.
5. Pour and mix with the flours in the bowl using a spatula. The mixture will be wet but not enough that it will lose its shape. Form it with the spatula into a round and then place it on the centre of the baking tray.
6. With a knife cut into four sections and sprinkle on a teaspoon of coconut sugar and place in the oven. Bake for 12 minutes and then cut into four and let them cool. They are wonderful with sliced banana and strawberry jam inside.
