Healthy Raspberry Nut Cake

This delightful summertime treats with the flavour of sweet and sour seasonal fruits. They are both cooling and heavy, so if you are a kapha go easy on these. The nuts are grounding for vata doshas, pitta may find them a knock out and fall in love straight away!

Base

  • 1 cup almonds
  • 4 tbsp Oats
  • 1 1/2 cups dates

Filling

  • 3 cups cashews soaked
  • 1/2 cup coconut cream
  • 2 tbsp cocoa butter melted
  • 1/2 fresh lime juice
  • 2 tbsp freeze-dried raspberry

Topping

  • 1/2 cup berries raspberries, blueberry or strawberry

1. Make the base by adding the ingredients to a food processor. Once they become breadcrumb-like and sticky transfer them to the 2-inch base forms. Press down the base and add to the freezer.

2. In a clean food processor combine all the filling ingredients together.

3. Place half of the filling into a bowl, cover and place on the side.

4. Add 2 tbsp of raspberries to the mixture in the food processor and combine.

5. Get the base out the freezer. Use a tablespoon and add the raspberry layer onto the base and place back in the freezer for 20 minutes.

6. Get the cake back out and add the next layer of creamy filling. Pop back into the freezer for 20 mins. Finally when you are ready to serve, take them out and add fresh berries to the top and serve.
