Raw peach and raspberry nut-cheesecake

Its the end of summer and the weather is hot. There is nothing like peaches and nuts to make you feel well nourished and rejuvenated. Ice creams are not over rated you need more raw cake in your life. Please do try this at home.

Crust

  • 1 cup Almonds
  • 6 dates
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup or rice syrup

Filling

  • 1 1/2 cup cashew soaked
  • 2 peaches chopped
  • 6 tbsp lemon juice
  • 6 tbsp maple syrup
  • 5 tbsp coconut oil
  • 1 tsp ginger powder
  • 1 tbsp vanilla
  • 1/4 tsp salt

Top Layer

  • 1 peach
  • 2 tbsp of the filling mixture
  • 1/2 cup raspberries or another berry
  • 1 tbsp lemon juice

1. Add all crust ingredients to a food processor with an s-bland and combine to make a dough. Line a 6” inch cake form. Press the dough into the form and freeze whilst you make the filling.

2. Blend the filling ingredients until completely smooth and pour onto the base leaving 2 tbsp of the mixture in the blender for the top layer. Place cake in the freezer till finished with the next part.

3. Add the top layer ingredients to the blender and make into a smooth liquid. Now take the cake out of the freezer and pour this top layer
