Rice & Quinoa Pilaf
It was a hard choice to make, which for lunch rice or quinoa, well why not both in this rice & quinoa pilaf? Don't you just love to eat basmati rice for it's aroma and light fluffy texture? Well what about all the health benefits of quinoa for vegetarians it has all 9 amino acids. Now imagine the flavor of rice but with twice the amount of protein power and fibre.
Quinoa has a plethora of amino acids, manganese and magnesium which provide energy and power to muscles. Adding in quinoa to rice makes this tasty side dish pop with flavor as well. Whilst at the same time providing bitter and cooling qualities making this great for pitta and kapha, vata can still enjoy this dish with the presence of adding ghee.

1. In a heavy pan, over a medium flame, heat the oil. Add in seasonal seeds for 30 seconds of roasting. Once the aroma starts to fill he air remove and set aside.
2. Add the quinoa to the sauce pan with 2 cups of boiling water. Stir and cook for 12 minutes on a medium flame with the lid on.
3. Add the rice, curry powder, spices, salt and stir. Turn to a low flame and leave to cook for 10 minutes.
4. Turn off the flame and let the rice steam for 10 minutes, then fluff up with a fork and serve with salad and chutney for a perfect lunch.
