These tender and tasty roasted beets feel like a jewel. Very detoxifying and building for blood beets are in season this spring, this recipe will make sure you enjoy eating them.

1. Preheat the oven to 170 degrees.
2. Peel and quarter the beets leaving a few inches of the stems, (peel right the way to the top of the beetroot).
3. Place them in a dutch oven with 5 springs of thyme and 8 leaves of sage.
4. Place the lid on top and cook for 20 minutes or until soft and tender.
5. Meanwhile in a frying pan gently fry the leek with a drizzle of oil. Toss the leek over the beets are they are done and sprinkle with sesame seeds.
