Roasted Beets⁠

These tender and tasty roasted beets feel like a jewel. Very detoxifying and building for blood beets are in season this spring, this recipe will make sure you enjoy eating them.

INGREDIENTS

  • 3 beets peeled⁠
  • 2 tsp ghee⁠
  • Pinch of pink salt⁠
  • 1/2 a leek⁠
  • Spring of thyme⁠
  • 8 sage leaves⁠
  • 1 tsp white sesame seeds⁠
  • 1/2 cup water⁠

INSTRUCTIONS


INSTRUCTIONS


1. Preheat the oven to 170 degrees.

2. Peel and quarter the beets leaving a few inches of the stems, (peel right the way to the top of the beetroot).⁠

3. Place them in a dutch oven with 5 springs of thyme and 8 leaves of sage.⁠

4. Place the lid on top and cook for 20 minutes or until soft and tender.⁠

5. Meanwhile in a frying pan gently fry the leek with a drizzle of oil. Toss the leek over the beets are they are done and sprinkle with sesame seeds.
