Spinach Lasagne w/ Goats Cheese and Almond
This quick Green Spinach Lasagna is a wonderful mid week meal that both your adults and kids will love. The flavour is off the chart YUM! And if you like simple meals this will become a firm favorite.
The health benefits of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels. In Ayurveda they are priced for and recommended to eat daily without the skins on. As the skins are toxic for the body, astringent and difficult to digest. Almonds are building for the body as they pacify Vata dosha. They are also rich in Vitamin E and magnesium and contain calcium, iron, phosphorus, potassium and zinc.
I don’t say this lightly. This truly is the BEST Green Lasagna! Layered with a goats cheese and loads of fresh spinach, this lasagna is juicy and is sure to satisfy!

1. Lasanga sheets need to be prepared as per instructions.
2. Prepare the oven 170 degrees c 338 f
3. Sauteed in leeks on low heat in a frying pan with the ghee. After a minute add in the spinach and leave to wilt for 4 minutes before stirring and adding in the cumin powder.
4. Make the white sauce by adding all the ingrediants to a blender and combining until smooth.
5. First layer the ceramic dish with white sauce, followed by the lasagna sheet. The next layer is the spinach and then the lasagna sheet and then the white sauce. Top off with a sprinkle of mozzarella cheese if you prefer a crispy topping and cook covered with foil for 20 minutes in the oven before serving hot.
