Strawberry Thyme Herbal Honey
This isn’t just any jam. It’s a medicinal blend of strawberries, thyme, and honey—a trio infused with nature’s healing touch and a flavour that lingers like a summer memory on your tongue.
Strawberries, rich in vitamin C and antioxidants, meet the grounding, antimicrobial magic of thyme, and the soothing, immune-boosting properties of raw honey. When gently simmered together, they create a jam that’s not only delicious but deeply nourishing to the heart, skin, and immune system.
Antioxidants play a vital role in neutralising free radicals, which can damage our cells and accelerate ageing. This jam is a sweet ally in your Ayurvedic kitchen—helping to protect against inflammation, balance excess heat (Pitta), and support ojas, your vital energy of immunity and vitality.

SERVINGS
2 Cups
INGREDIENTS
1/2 cup dark honey
1 cup strawberries
2 Tbsp thyme
1 tbsp lemon juice and zest
INSTRUCTIONS
Prepare the Fruit & Herbs
Gently wash the strawberries and remove the stems. Dice into quarters. Strip the thyme leaves from the sprigs.
Mix the Jam
In a bowl, combine the strawberries, thyme, raw honey, salt, and lemon juice if using. Stir gently until the fruit is well coated and begins to release its juices.
Let it Marinate
Allow the mixture to sit for at least 15–20 minutes. The honey will begin to pull out the natural juices, creating a fresh, syrupy jam. For a thicker consistency, you can lightly mash with a fork or simmer gently on low heat for 10 minutes and let cool.
Serve with Love
Enjoy spooned over millet porridge, spread on toasted sourdough, or as a topping for yoghurt or pancakes. Store any leftovers in the fridge for up to 3 days.
