2 tablespoons coconut oil
1 julienned carrot
100 grams shiitake mushrooms
100 grams oyster mushrooms
50 grams of trumpet mushrooms
1 pepper
4 stripes of tempeh
1 teaspoon coriander seed
2 tablespoons tamari sauce
Lettuce leaves for serving
1. Heat coconut oil over medium-high heat in a large skillet.
2. Add shiitake, oyster, and trumpet mushrooms and cook for an additional 5-7 minutes until they are softened and lightly browned.
3. Add sliced pepper and tempeh to the skillet and cook for 3-4 minutes until the tempeh is browned and crispy. Lastly, add in the juliened carrots and cook for 2-3 minutes
4. Crush coriander seed and add to the skillet along with tamari sauce. Stir to combine.
5. Remove the skillet from heat and let it cool until it is safe to handle.
6.Take lettuce leaves, fill them with the cooked mixture from the skillet and serve immediately.
