Ayurvedic Scrambled Eggs
We recently had an incredible experience at a retreat where our Ayurvedic scrambled eggs became the star of the show! They were such a crowd-pleaser that we couldn’t wait to share the recipe along with some insights on their Ayurvedic benefits.
From an Ayurvedic perspective, eggs have unique qualities. They are considered unctuous (oily) and heavy, making them especially beneficial for pacifying the Vata dosha. However, due to their primarily Earth and Fire elements, they can aggravate Pitta and Kapha. Eggs are known to nourish the body's fat, marrow, and muscles, providing strength and vitality.
It's important to note that eggs, like dairy and meat, are classified as tamasic in nature, meaning they can contribute to inertia and carry impure karma. While eggs do have a place in Ayurveda, incorporating them into your diet is ultimately a personal and ethical choice.
For those who choose to include eggs, selecting organic and free-range options is recommended for a more conscious approach.
Now, without further ado, let’s dive into the recipe for our Ayurvedic scrambled eggs—nourishing, flavorful, and easy to prepare!

1. Crack the eggs into a bowl and whisk them well until they are thoroughly combined with the salt and turmeric.
2. Heat a non-stick pan over medium heat and add the nigella seed or black cumin. Toast them for about 30 seconds until they become fragrant.
3. Pour the whisked eggs into the pan.
4. Using a spatula or wooden spoon, gently scramble the eggs in the pan. Keep stirring until they are cooked to your desired consistency, usually about 3-4 minutes.
5. Once the eggs are cooked, remove them from the heat and transfer them to a plate.
6. Serve the Ayurvedic scrambled eggs warm and enjoy their creamy and light texture.

NOTES
Remember, in Ayurveda, we avoid combining eggs with dairy. These eggs are suitable for Vata types or when recovering from illness and needing immediate energy. They can also be beneficial for women trying to conceive and during pregnancy, as long as there isn't a Pitta imbalance. Kapha types can opt for egg whites instead.
Each egg provides approximately 6 grams of protein, making this a nourishing and satisfying meal option.
