Citrus Upside-Down Almond Cake Recipe

1. Preheat your oven to 180°C.
2. Grease an 8-inch square cake pan with parchment paper and coconut oil and a sprinkle of coconut sugar.
3. Arrange the citrus slices in the bottom of the cake pan, two rows of each flavour packed side by side.
4. In a mixing bowl, combine the almond meal, eggs, rice malt syrup, coconut milk, coconut oil, cinnamon powder, vanilla bean, baking powder, and nutmeg. Mix until well combined.
5. Pour the batter over the citrus slices in the cake pan.
6. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted in the centre of the cake comes out clean.
7. Let the cake cool in the pan for 10-15 minutes before flipping it over onto a serving plate.
8. Serve the cake warm or at room temperature. Enjoy!
