  • 4 Endive
  • 150 g Parmesan cheese or a vegetarian alternative
  • Juice of 1/2 lemon
  • 1 handful of pistachio nuts
  • 1/4 bunch of parsley
  • 3 tbsp olive oil
  • 1 tbsp maple syrup
  • Pinch of pink salt

1. Heat the oven to 220 degrees. Begin by washing the chicory and removing any damaged leaves. Cut the chicory leaves in half into thin stripes and set them aside.

2. Add the grated parmesan cheese (or a vegetarian alternative) to the glass baking dish and set the chicory on top.

3. In a small bowl, mix together the juice of 1/2 lemon, 3 tbsp of olive oil, 1 tbsp of maple syrup, and a pinch of pink salt.

4. Pour the dressing onto the chicory and Parmesan cheese and place it in the oven for 20 minutes.

5. Chop 1/4 bunch of parsley and scatter it over the chicory once out of the oven.

6. Chop a handful of pistachio nuts and sprinkle them on top of the salad.

7. Serve room temp. and enjoy your delicious endive salad!
