Pomegranate Chutney

This pomegranate chutney has all the wonderful benefits of reducing amatoxins and flavor for this season. Pomegranate is sweet, sour, and astringent means it’s cooling and rejuvenating for the body. Pomegranate is known as “Hita” हित or that which is beneficial as it helps to balance & normalize Dosha, even pitta can manage the sour taste. It is a tridoshic Ayurvedic Superfood with many health benefits: -Improves Digestion. -The high fiber content of pomegranates makes them an effective tool for regulating bowel movement and improving gut health. -Increases Fertility. -Encourages Hair Growth. -Keeps Skin Hydrated & Protected. -Reduces Skin Inflammation & Acne.

  • 1 cup fresh pomegranate seed
  • 1-2 tbsp jaggery sugar
  • 1 tsp ghee
  • 8 curry leafs
  • 1/2 tsp brown mustard seeds
  • 1/2- 1 tsp salt

INSTRUCTIONS


1. Quarter the pomegranate and pick out the juicy red seeds into a bowl. Cover with the jaggery sugar and set aside.

2. In a steel frying pan melt the ghee on a medium flame.

3. Next, add in the mustard seeds and wait till they dance in the oil and pop.

4. Add in the curry leaf and pour over the pomegranate and stir.

5. Cook on a gentle heat for about 7 minutes and then your chutney is ready to serve.
