Stuffed Avocado & Vegan Cheese

Avocados are moist, heavy, excellent at Ojas building, rich, creamy and satisfying. Avocados are full of good fats which are a great addition to a healthy lifestyle. So when I decided to make this recipe for stuffed avocados I felt it was a great way to add them to your diet. If you prefer to scoop them out of the skins and simply serve them with some salad on the side they’re also a great addition for Nourish bowls (Like the one I made in this video).

Avocados are a great source of protein at 4 g per avocado and they have 18 of the essential amino acids. They’re wonderful at keeping your joints, skin and nails juicy and glowing and a great replacement for bananas. Not only do they taste heavenly they are really nourishing and comforting which calms Vata Dosha. They are said to be tamasic but you can add a squeeze of lime, a pinch of salt and some fresh cilantro and some beans as we are here (by adding chickpeas) in this recipe to help assist your digestion.

  • 1 cup chickpeas cooked
  • 1 teaspoon curry powder
  • 1 tablespoon coconut oil
  • 1 teaspoon salt

INSTRUCTIONS

1. Start by lining a tray with greaseproof paper.

2. Wash and drain the chickpeas and add them to the tray. Add over the liquid coconut oil and the curry powder season with salt. Add them under the grill for 10 minutes and then turn them over and grill for another 10 minutes.

3. Once the chickpeas browned and smell roasted but not burnt. Leave them, take them out the oven and leave them on the side to cool.

4. Cut an avocado in half and take out the seed. Fill the hole of the avocado with the vegan cheese and pour over the chickpeas to serve.



Vegan Cheese

Makes 1 cup

  • 3/4 a cup of cashew nuts
  • 1 tbsp EV Olive oil
  • The juice of half a lemon
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp fennel
  • 1/3 cup nutritional yeast
  • Half a teaspoon of rock salt
  • 1/4 cup of water

1. Add all of the ingredients into a blender and whizz them around until smooth.
