  • 1/2 cup coconut oil or ghee
  • 1/2 cup jaggery sugar
  • 1 cup unbleached flour
  • 1 tsp baking flour
  • 1/2 tsp pink salt
  • 1 tsp cinnamon powder
  • 1/4 tsp ginger powder
  • 1/4 tsp clove powder
  • 1 orange zest and juice
  • 3 cups oats
  • 3/4 cup almond milk
  • 1/2 cup walnuts chopped
  • 1 cup raisins

1. To begin, gently heat 1/2 cup of coconut oil or ghee in a pan, bringing it to a smooth consistency. Add 1/2 cup of jaggery sugar and continue to mix until it dissolves into the oil.


2. In a separate bowl, sift 1 cup of unbleached flour and add 1 tsp of baking powder, 1/2 tsp pink salt, 1 tsp cinnamon powder, 1/4 tsp ginger powder, and 1/4 tsp clove powder. Stir in the zest and juice of one orange.


3. Slowly add the dry ingredients to the wet mixture, stirring continuously. Gradually add in 3 cups of oats, 3/4 cup of almond milk, 1/2 cup of chopped walnuts, and 1 cup of raisins. Mix well until all the ingredients are evenly combined.


4. Preheat your oven to 350 degrees Fahrenheit and line a baking tray with parchment paper. Take a spoonful of the cookie dough and shape it into a small ball. Place them onto the baking tray, ensuring they are spaced apart. Use a fork to press them down in the centre and hold the edges with your fingers. This helps ensure they cook evenly if they are the same thickness, about 3-5 mm thick.


5. Bake the cookies for 10-12 minutes or until they are a light golden brown. Once baked, remove from the oven and cool on a wire rack. These Spiced Oat Cookies are perfect for a sweet and satisfying treat while also providing the body with nourishing and wholesome ingredients. Enjoy!
